I love healthy light desserts and this is one of them. It’s easy to make and you can add and edit it all year around with seasonal fruits and nuts or even left over cakes and biscuits. Feel free to go wild here…
PANEER OR PANIR CHEESE (VEDIC COOKING)
I fell in love with paneer the first time I cooked it at an inspiring Vedic cooking class held by Fredy Keller. He is a wonderful cook and a most interesting man. I try to make paneer at least every other week and normally make a big pot of milk and keep the paneer well wrapped in the fridge. It’s a lot of trouble to make a whole Vedic meal but paneer and rice and veggies by the side... simply fabulous!
Pizza is one of the absolute favourite dishes of my family. They cannot get enough of it. If it has to be done rapidly, we always have organic pizza dough in the fridge, which we cover with our favorite ingredients. We always use buffalo mozzarella – you can taste the difference! If we have sufficient time, we prepare the pizza dough itself.
QUICK, SWEET PASTRY
Where I come from, we make yummy pies with seasonal fruits for each and every time of the year. I usually make a triple quantity of pastry, divide it into three portions, and freeze two of them for the upcoming week.
